This month, foodies everywhere whipped up an authentic Greek feast to celebrate World on a Plate, and the results didn’t half make our mouths water!
Mari of the Mari’s World blog really threw herself into the challenge by cooking not one, but four different plates of food! As well as a good few side dishes, Mari made tzatziki, horiatiki (Greek salad), spanakopita (spinach pie) and, of course, Greek kebabs. Our taste buds are tingling just thinking about her feast!
Kate, the brains behind Veggie Desserts, added a sweet twist to her Greek dish. She channelled memories of her time spent travelling around Greece with a Greek salad with watermelon, a bowl of delicious olives and plate of homemade Greek flatbreads. And if those mouth-watering flavour combinations weren’t enough, every dish is really easy to whip up, as you’ll see from her blog post!
And now for something completely different! We love what Grace from Eats Amazing came up with for her World on a Plate challenge… frozen Greek yoghurt bark! She lined three baking trays with baking paper before pouring in Greek yoghurt, and topping each tray with different fruits and nuts. She then froze each tray overnight, and the ‘bark’ was ready!
Nayna Kanabar, of Simply Sensational Food used her World on a Plate package to create a colourful and delicious tart. Incorporating roasted vegetables such as asparagus, broccoli, cherry tomatoes, peppers and courgette, alongside feta cheese and filo pastry, her finished dish looked like a real crowd pleaser.
Greek salad is an old faithful staple that has lost some of its authenticity outside of the country. Yvonne Maffei of My Halal Kitchen went back to basics though, making a batch of traditional Horiatiki Salata. This incredibly light and fresh salad incorporates not just olives, feta cheese, tomatoes, red onion and cucumber, but oregano, capers, salt and olive oil. Opa, indeed!
Lyzi at Being Little tried her hand at Grecian gastronomy with a selection of tasty dishes. For the main event, Lyzi made Greek souvlaki – tender chicken and lamb kebabs with chunks of fresh courgette, peppers and aubergine. They were then paired with two gorgeous dips: tzatziki and baba ghanoush, the latter of which is made from roasted aubergine. Simple yet stunning.
Food-lover Rachel, from The Ordinary Lovely, decided to make something a little different for her World on a Plate: Greece challenge. After starting her feast with stuffed olives, cucumber and halloumi salad and lemon chicken skewers, she finished with Troufakia – Greek chocolate truffles. Incorporating chocolate, plain biscuits, chopped walnuts, milk and cream, they’re easy to make and melt in your mouth.
Katy, of What Katy Said, made her family a light three course meal for her World on a Plate challenge. To start, she paired a sun-dried tomato and Greek salad with olive oil and a crusty baguette, before moving onto a main course of chicken pasta salad with olives and roasted peppers. To finish, Katy tried her hand at Greek honey cake, a popular dessert right across Greece.
A Grecian World on a Plate roundup wouldn’t be the same without a moussaka. Vicki at The Free From Fairy provided us with a serious contender. She channelled her love of Greece’s sun-soaked landscapes and clear waters through a gluten-free, dairy-free, paleo moussaka! Tasty and good for you? What more could you want?
If you ask us, hummus is underrated, especially when it’s homemade. Jenny, of Where is Jenny?, decided to show us all what we have been missing, with a big batch of this classic dip. She combined chickpeas, water, lemon juice, tahini, garlic, olive oil and salt for an authentic taste of Greece.
Valen, from Eating the Globe, turned her hand to souvlaki. She made her kebabs with pork marinated in olive oil, red wine vinegar, lemon juice, garlic, onion, oregano, parsley and mint, and paired them with a winning accompaniment of grilled peppers.
Finally, Laura, from Side Street Style, created a taste of Greece with a group of Mediterranean favourites. She started off with little bowls of iconic Greek nibbles: sundried tomatoes, roasted peppers and olives, all marinated in olive oil. Next, Laura moved on to spanakopita, a flavoursome Greek pie incorporating flaky pastry, spinach and feta cheese. Lovely!
